Monthly Weight Loss and Pictures

Hey, everyone.
 
This morning I weighed in at 159.8. I lost 3.4 lbs this month and 2.75 inches overall. I'm excited to finally be in the 150s!
 
The last couple of weeks I haven't been able to workout because of some health issues. I don't feel comfortable talking about them on here right now, especially since I'm not even sure exactly what's going on yet. I even had to quit my job. Needless to say, what I'm going through right now is really scary and I could really use your prayers. I don't know when I'll be able to go to the gym again; I pray it's soon.
 
Brad, Oopsie and I are going to Ohio to visit family June 3rd-10th. Even though I'm not feeling well he thinks it's best for me to go to try to get my mind off of things.

Healthy Recipes

Hello!
 
Here are the new healthy recipes I tried this month. :-D
 
Bacon Ranch Pea Salad - You can use turkey bacon, fat-free or low-fat ranch and cheddar cheese to make it healthier.
Simple Shrimp and Guacamole Tostadas - You can use fat-free or low-fat cheddar instead to make it healthier.
Baked Eggplant Parmesan - I suggest using Prego's Tomato, Onion and Garlic spaghetti sauce. Again, you can you fat-free or low-fat mozzarella to make it healthier. Also, watch your eggplant because that cooking time was a little too much for mine.
Fiesta Salad with Cilantro Lime Vinaigrette - Eat within the first day or two because the olive oil becomes congealed.
 
Here's a super easy, healthy and yummy snack I discovered this month:
 
Apple (I like Gala or Fuji)
Natural PB
Mini semi-sweet chocolate chips
Slivered Almonds (optional)
 
Slice apple, top slices with natural PB, sprinkle on some mini semi-sweet chocolate chips and top with slivered almonds if desired.
 
Also, I tried this salad in a local restaurant and LOVED it. I have been making it at home at least once a week. It makes two regular salads or one really big salad:
 
Bag of spring mix lettuce
A piece of sliced grilled chicken - I  use a bag of Tyson pre-cooked grilled chicken for this salad
Glazed pecans, reduced-fat feta and dried cranberries to taste
Balsamic Vinaigrette to your liking - I make my own but I don't measure it. I just mix some really good and aged balsamic, extra virgin olive oil and a pack of Truvia together.

NFC Commercial

Good morning!
 
Click here to see the commercial I was a part of for National Fitness Center a few weeks ago that I blogged about. It's super fast (I knew it would be) but I'm in it three times. You can see me on the elliptical, lifting weights and in the back on the spin bike. Pretty cool! :-D
