This meatloaf is scrumdiddilyumptious. I got the recipe from an Amish cookbook and tweaked it to make it my own.
Note: Besides the hamburger and egg, all of this is an estimate of what I use. I don't measure. Add or take away from the spices, etc. to suit your taste.
2 lbs lean ground hamburger
1 egg
1/3 cup milk
1/2 cup whole grain quick cooking oats
1/3 of a sweet onion - diced
2 large cloves of fresh garlic - minced
About 5 or so shakes of the following: basil, parsley, oregano, onion powder, garlic powder, dill weed, celery seed, red curry powder, nutmeg, rosemary, paprika ... Heck, just throw the kitchen sink in, too! Ha.
Mix together everything except meat, then add meat and gently mix it all together (don't overwork the meat). Place in your meatloaf pan or whatever you use. Then mix together the topping (the topping makes this meatloaf!).
1/3 cup ketchup
1/2 tsp of mustard
1/4 cup brown sugar (again, depending on taste -- I like it sweet).
Poke holes in the meatloaf and then spread all of this yumminess evenly on top. Then sprinkle the top with parsley and basil. Bake at 350 degrees for 1 hour and 10 minutes.
The gravy pictured is also homemade (believe it or not, I just learned to make gravy a few weeks ago -- it's SO easy!) but I don't measure and I don't want to give you way-off measurements on liquid and what-not. So, I'll spare you the trouble. It's delicious, though. :)
